What better way to ring in the New Year than with a soothing and celebratory bowl of wonton soup?
Charles Phan of San Francisco’s The Slanted Door takes us step-by-step through a perfectly balanced bowl of soup with hearty fresh egg noodles, delicate handmade wontons and tender-yet-chewy braised pork. The wonton filling gets sweetness from shrimp, spice from ginger, richness from pork, earthiness from trumpet mushrooms and crunch from water chestnuts and jicama. Thin slices of loi soi pork are redolent of black cardamom, star anise, cinnamon, ginger and cloves. Rich chicharones, heat-packing chili oil and fresh cilantro and scallions bring dimension to the dish. The best part? All the ingredients can be prepped in advance, so you can wake up on New Year’s Day to a hangover-curing bowl of goodness that comes together without any slaving at the stove.
