Tasting Tips
This week, Michael Mina enlists the help of Tim Ferriss, the 4-hour guru, and presents the perfect meal for the health-conscious pork lover.
Lean, clean pork tenderloin meets luscious, smoky bacon while savory bacon fat coats roasted pearl onions. The roasted onions lend sweetness to the dish, as do the beta-carotene-packed carrots, which are infused with the exotic, floral spice of cardamom seeds. In place of a carb-loaded, starchy side, Michael introduces a mild, woody and nutrient-packed walnut purée. The purée serves as a backdrop that compliments the other flavors of the dish without overpowering them. Fresh frisée enlivens the dish with its bitterness and feathery texture and a sweet-yet-acidic sherry vinaigrette shifts the whole meal into perfect balance.
