What to Drink
2008 Domaine de Trevallon Cabernet Sauvignon-Syrah, Vin de Pays du Bouche du Rhone, France
Every week, world-renowned sommelier, Rajat Parr, shares advice and tasting notes on what to drink with our featured meal.
This dish requires a wine of equal weight and flavor to stand up to the powerful and savory flavors. There are few greater pairings than beef and Cabernet Sauvignon, but when ingredients like horseradish are brought in, the dynamic of the dish is slightly changed; this is where the addition of Syrah in the wine comes into play. The peppery and meaty notes of the Syrah harmonize with the horseradish, creating a pairing that is not only complementary, but also complex.
