Petrale Sole

This West Coast favorite is not true sole, but it’s a delicious member of the flounder family. Once over-fished, petrale sole is back into the safe-to-eat zone. Thanks to strict “catch rates” set by the government, in combination with the above-average reproduction and survival rates of the fish, the petrale sole population has rebounded over the past three years.

  • Judging freshness. If you’re buying a whole fish, look for firm flesh and clear eyes. When shopping for fillets, look for white, almost tacky flesh. They should smell very clean and fresh, like the sea.
  • Storing at home. If possible, serve the sole the same day that you buy it. Otherwise, it can be stored overnight in a plastic container lined with paper towels.

Petrale sole is flat fish with delicate flesh that has a buttery, slightly sweet flavor.
