Fresno Chiles
Fresno Chiles
Fresno chiles are similar to jalapeños, but they have thinner walls. They range in heat from mild to spicy. Chiles grow very well in warm to hot climates, which is why they’re so prevalent in Mexican and Tex-Mex food.
- Judging freshness. Fresno chiles start out green and turn red as they ripen. If you’re picking them up for Michael’s Crab Cioppino, the redder the better. Red jalapeños make a good substitute.
- Storing at home. Peppers of all kinds will last 4 to 7 days in the fridge.
